• 6 slices Sunbake Brown Bread, cut into 1.5 x 4 cm strips
  • 3 large eggs
  • ½ cup milk
  • 1 tbls light brown sugar
  • 1 tbls sugar
  • 2 tsp cinnamon
  • 1 – 2 tsp vanilla
  • Sugar syrup and icing sugar to serve


Preheat the oven to 180°C. Grease 8 muffin tin cavities well. In a bowl, mix eggs, milk, sugars, cinnamon and vanilla and whisk to combine. Coat the bread with this egg mixture – toss with a spoon to help coat evenly. Into the prepared muffin tins, place bread loosely in a circular shape to resemble a rose (without packing bread down) and pour over any remaining egg mixture. Each muffin cavity should be about ¾ full.

Bake for 20 – 25 min or until golden brown and no wet batter remains. If any area is getting too dark, cover with foil. Allow to cool slightly (10 mins) before attempting to dislodge – serve with a sprinkling of icing sugar and syrup.

Optional extra: Bake with a little Christmas fruit mince. Add this when creating your rose shape.
