• 3 Sunbake Fruit Buns
  • 2 Eggs
  • 125 ml Milk
  • 1 ml Vanilla essence
  • 1 tbls Butter or oil for frying
  • 60 ml Mascarpone
  • 2 tbls Berry jam
  • Mint and fresh berries to garnish


Cut fruit buns in half. In a wide bowl, beat eggs, milk and vanilla essence together and briefly dip the half buns in the liquid. Heat butter and cook both sides until golden brown, then drain on paper towel.

Serve immediately, by layering bun halves with mascarpone and jam, using 3 half buns per stack. Top with jam, mascarpone and berries.
